Organic Yoghurt Berry Granola Pancakes

Pancake Batter Ingredients

1 ¼ cups all-purpose flour
½ cup whole wheat flour
1 tablespoon sugar
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 ¾ cups buttermilk
1 egg
1 tablespoon unsalted butter, melted
3-4 drops teaspoon almond extract

Pancake Topping:

1 ½ Cups Natural or Vanilla Brown Cow Organics Yoghurt
¾ cup low-fat granola
3 cups mixed berries (strawberries, blueberries, raspberries)

Whisk together flours, sugar, baking powder, baking soda and salt.
Separately whisk together buttermilk, egg, butter and almond extract.
Now add the liquid mix into the powder ingredients, mix together until the batter is thick and smooth.
Heat pancake or frying pan with cooking spray over medium heat. Pour 3 tablespoons batter onto pan and cook about 2 minutes (until bubbles on pancake start to break.) Flip pancake and cook other side until golden brown.
Repeat to produce all your pancakes and the batter is all gone.
Spread 2 tablespoons of your chosen flavour yogurt on top of one pancake. Now add ¼ cup berries and sprinkle with 1 tablespoon granola. Layer another pancake on top and repeat the yoghurt, berries and granola.
Makes enough for 4-5 servings
