Organic Yoghurt Cheesecake

Organic Yoghurt Cheesecake

Use our natural organic yoghurt to make this delicious and healthier cheesecake, or our vanilla organic yoghurt for extra flavour. Top or serve with any fresh fruit to make a dessert with a difference over Easter.

Cheesecake Base
1/2 cup rolled oats
1 egg white
2 Tbsp honey

-Line a 6 in cake tin with baking paper or use a spring release tin.
-Pre-heat oven to 190C | 375F | Gas Mark 5
-Put honey and egg white in a medium bowl and mix together
-Then add in the oats and mix again till all combined
-Press oat mix into tin and bake in oven for 20-25 minutes (until brown)
-Remove from oven and put to one side to cool.

Cheesecake Filling
-2 cups of organic yoghurt - Brown Cow Organics natural or vanilla flavour
-1/4 cup of honey (add little more or less depending on your sweet tooth!)
-2 large eggs
-1 tsp real vanilla extract (halve this if using vanilla organic yoghurt)
-pinch of salt


-Mix together organic yoghurt and honey in a bowl until smooth
-Add salt, eggs and vanilla extract, then whisk to combine.
-Pour mixture into lined cake tin
-Put tin into a larger tin or oven proof dish to create a water bath.
-Add approx 1 inch of water to larger tin, take care not to get water over the side of the tin containing the cheesecake mix.
-Cook in centre of oven at 190C | 375F | Gas Mark 5 for 1 hour (till cheesecake slightly wobbly in the center)
-Once cooked leave in oven and turn oven off, leave oven door partially open and leave cheesecake to set for 20 minutes till centre is set.
-Remove from oven and large tin/dish water bath to come to room temperature.
-Put cheesecake in the refrigerator for minimum of two hours before serving.
-Take cheesecake from fridge, carefully pull the baking paper and lift cheesecake from tin. (Or release the spring-latch if you're using a spring-load tin.)
-Place on a flat serving plate, gently add any fruit or other topping and slice.
